The mention of gobi paratha, gets the juices flowin'. We decided to make gobi parathas accompanied by fresh mango milkshake for brunch one Sunday morning. Here's the recipe...
Ingredients:
3 cups wheat flour
2 cups cut cabbage
1/2 minced serrano pepper
1 teaspoon garam masala
1 teaspoon corriander powder
1 teaspoon cumin seeds
3 tablespoons oil
salt to taste
Preparation:
1. Mix the flour with salt and knead the dough
2. In a frying pan, heat the oil and add the cumin seeds to it. Once the seeds start sizzling add the serrano pepper and the cabbage. Then mix in the salt, garam masala and corriander powder.
3. Cook until the cabbage becomes tender and let the mixture cool.
4. Make 4-5 pieces of the dough. Then roll one piece out till you have a circle of about 3"-4" in diameter. Then take a heaped tablespoon of the cooked cabbage and place it in the center of the rolled out piece of dough. Wrap the dough around it and roll it out into a small pancake.
5. Heat a flat pan (tava) and just layyyyy it on there and cook it with oil.
6. Serve with achar/yogurt/sour cream!
